Fenugreek is easy to sprout and the sprouts make a spicy, crisp addition to any meal. Soaked in water and rinsed periodically for 4-5 days, fenugreek sprouts are high in vitamin A, C and B as well as iron, calcium, silicon, selenium and high levels of protein, most notably the amino acid 4-hydroxyisoleucine which increases production of insulin when blood sugar is high, making it very useful for treating diabetes.
