  • Raisin Bran Muffins

These raisin bran muffins have become a must to make each week. They are hubby's favorite and they are very expensive when you buy them at the store now. They were bran. Well, I went online and searched for a receipt and came up with this one. It is fantastic! I vary it a bit depending if we have applesauce or not. Great with or without applesauce. Cooking time varies. Just experiment until you get what you like. I double the batch to make them larger.

    Post Raisin Bran Muffins Ingredients
    1 1/4 c Flour
    1/2 c Applesauce
    1 tb Baking powder
    1/3 c Brown sugar; packed
    1/4 ts Salt
2 tb Margarine; melted, (can use
2 c POST raisin bran cereal
    1/3 c Dried apricots; chopped,
    1 c Skim milk
    Cinnamon sugar; (*optional,
    1 Egg; slightly beaten
Instructions for Post Raisin Bran Muffins
Heat oven to 400 (375 if you are making extra large muffins, as I do).
Mix flour, baking powder, and salt in a large bowl.
Mix cereal and milk in a separate bowl and let stand 3 minutes.
Add to the cereal and milk, the egg, applesauce, sugar and margarine.
Add to flour mix, with the apricots if you are using them, and stir
until just moistened. Pour into sprayed muffin pan, (sprinkle with
cinnamon-sugar, if desired) and bake 20 minutes until golden. Makes 12.
NOTE, if you like the extra large (Texas-sized ) muffins like I do, bake at 375,
for 20-30 minutes (closer to 30, but check at 20). Makes 6
The tops meet when cooking and I thought I did something wrong but that just happens. Let your mix set for a few minutes before putting into pan.

  • Regaining strength and health

It has been quite some time since I have written anything here. I have spent a lot of time in the hospital and recovering. I had two major surgeries in 2008 within three and a half month of each other. The first to save my life, the second to reverse what had to be done the first time. The second one may have been too soon, but it is too late now to be concerned with that. To this day they do not what caused my situation. They found a blood and kidney issue that didn't want to stay in check. My blood pressure sky rocketed into the 200 plus over 100 range. I am being monitored closely with both situations. My body has just begun to come out of the fog it has been in for weeks. I lost about a month and began noticing my surroundings just before Christmas. It has been a slow recovery. My husband says no more hospital stays for me, as I have to come home to get well. My dear neighbor and husband have nursed me back to health both times. God blessed me with my life and I can't thank him enough for giving me more time with my family and loved ones. This is the first time I have been able to think coherently to want to write anything in months. I want to thank everyone that has been praying for me and please continue. I still have a long ways to go to regaining my health and strength. It amazes me what little things tire me and I am unable to do. I have lost lots of weight. Thank you to all my loved ones, friends and online friends that have supported me through this ordeal. God bless each and everyone of you.

  • Will be absent for a while!

Monday November 17th, I go into the hospital again to have major surgery. I am having the colosomy reversal done. Will be in hospital 5-7 days most likely. At least this time I will be healthy so it should go much better. I will go through misery preparing for the operation. The things I have to take and drink to clean myself out is unreal. I will be back as soon as possible to update.

    Hello Gifted Grandma;
I hope that this message has found you in one of your better days. I'm aware of how you spent your day before your colonoscopy as my husband underwent the same just two weeks ago. I fasted with him to make it easier.
None of the liquid for me tho.
I live on the North Coast of B.C., Canada and we love it here. We haven't travelled much but I can imagine that it must be beautiful there too.
I've spent the last twenty years with family tree research. (Genealogy) I love the early 1800 family pictures that you posted. They're such a treasure!
I am of Hawaiian /First Nations descent and my husband is English / Scotttish / First Nations. Yesterday, he was invited to help raise an enormous totem pole. What an honor! Wonderful way to spend a Father's Day. (Grandfather)
Again I wish you well and continued good health.
